Abstract

This work is carried out to enhance the performance and understanding the physical and chemical behavior of a fabricated sensor to detect the fat content in milk. The sensor, coated with a solution of Lipase and PMMA, changes the phase angle of its impedance when dipped in milk samples with different fat content. Thickness of the coating solution is varied for the appropriate selection of the sensor. Electrochemical Impedance Spectroscopy (EIS) of the proposed sensor system is studied in MEISP software for modeling. An equivalent electrical circuit obtained using this software is used to analyze and verify the fat content determination process.
